  • Warming gel. A warming gel in an ice cream scoop will allow you to scoop your ice cream as if you’re slicing butter; in theory. It’s not always that easy but the gel contained within will transfer the heat of your hand into the handle and is meant to melt the surface of the ice cream touching the scoop. The gel does mean these scoops need a bit more care in handling; you can’t just pop it in the dishwasher or the extreme heat will make the chemical lose its effectiveness.
  • Defrosting metals. Without the gel, you can still use a scoop that is made of a material that will serve to melt the surface of the ice cream just slightly, allowing it to slide out a bit easier. It will still transfer the heat of your hand to the scoop and the ice cream, but it may do so a bit slower without the gel. Aluminum is the most popular conductive metal but copper will also work (though because copper is more expensive, that’s not very cost efficient). Zinc or an alloy of any of these will work, too. Steel is the least conductive, so you won’t get much in the way of melting the surface with a stainless steel scoop. (Although there are other alternatives, so it isn’t necessarily a deal breaker.)
  • Triggers. Triggers will help loosen and free your ice cream from the scoop. Once an ice cream has been scooped out, its extreme coldness, combined with the room temperature metal scoop will create a bond that will, essentially, freeze the ice cream to the scoop.
